I love Summer and I love cooking and hosting get togethers! My friends have nicknamed me Martha Stewart for this reason. I’ve always felt like Summer is a season of celebration…especially after living on the East Coast for the past four years! Crostini are the ultimate party food and a ricotta crostini is the perfect blank canvas to show off both savory and sweet creations while staying somewhat healthy. Cool and creamy, ricotta is the perfect Summer cheese. Pictured are some examples, but the possibilities are endless.
Making ricotta crostini for a small or large group is really super simple. Since there is no right or wrong variation of ingredients, there are no specific ingredients for me to list for you. All you need to do is buy a fresh loaf of organic French bread and slice is into 1/3 inch thick slices. Toast the slices in the oven for a few minutes until they are golden brown. Once they have cooled a bit, slather each piece with some organic, whipped ricotta. Then top with whatever ingredients you like!
Lastly, topping them off with some drizzled organic olive oil or a pinch of sea salt, will make all of the other toppings pop. Here are the ingredients used in the picture above:
Top Row: tomatoes and basil pesto; blueberries and honey; extra-virgin olive oil; smoked salmon and dill
Middle Row: hazelnuts and apricot jam; smoked salmon and dill; strawberries and aged balsamic vinegar; cucumbers, mint and dill
Bottom Row: cucumbers, mint and dill; radishes and sea salt; leeks caramelized in butter; hard boiled eggs and chives
